With a background in restaurant management and experience working at Tangoe, a well-known Indian vegetarian restaurant in Leicester, Sentur decided to bring his vision to life by opening Santhi Indian Restaurant.

He took his inspiration from the spice-laden ports of Madras and Jaffna, the coconut-lined coast of Malabar, and the fusion of Manchuria and Szechuan cuisines.
